Orange Glazed Pork Chops

I was doing a little experimenting a week or so ago and came up with what I think is the perfect orange glaze for pork chops. I have used this on chicken as well and it works great on it.

Here is what you need
Two pork chops (Boneless or otherwise)
Three large oranges
3/4 cup of fresh squeezed orange juice (from the three oranges)
The zest of three large oranges
Two heaping tablespoons of orange marmalade
Two heaping tablespoons of brown sugar (Dark ot light
Roll your oranges before you cut them to soften them for juicing.
Cut them in half and juice them.
Then grate the orange zest off of them. If you grate them before juicing them it can be a sticky juicing experience.


Once you have the juicing and zesting done place two pork chops into a fairly large skillet and with a bit of olive oil and start them simmering. Salt and pepper before putting a lid on it. I cooked mine on medium heat.


Put a tablespoon of butter in the skillet and fire it up on medium high heat. Don't walk away as you will be stirring this almost to the end.

Add the orange juice, orange zest, and brown sugar to the pan and start stirring. Once you get that all mixed in add the orange marmalade and stir. Once you get to this point you can leave it for a second and check your pork chops, they are probably ready to turn.
turn the heat up on the glaze and stir constantly until you see it start to separate from the pan a bit. You might see a little wave circle the pan as you slowly stir and that effect will become more prominent as the glaze thickens. 
Once you get the glaze to thicken nicely open the lid on the chops and pour the glaze onto the meat. Turn the chops and spoon the glaze from the bottom of the pan back onto the meat as you tilt the pan slightly. Do this continuously turning the chops to coat both sides. Once they look like this,
They are ready to plate.
I served these with green beans a baked potato and a nice roll.

Let me tell you that there were no leftovers to share with the ole pooch!

Spring is here! Well at least it is here in the plant incubator, here are some pictures of some of the seedlings that have sprouted.

And out in the garden there is signs of life in the cold frame.
Iceberg Lettuce

 Only two pots here have sprouted, I am not sure if I am having problems yet as I have not had time to check the germination periods on all these seeds.
Most of that is Brussel sprouts, Broccoli, eggplant and some romaine type lettuce. I may have to restart these. It is warm enough here to till the garden but I am no fool, I will wait. I am taking my vacation this year to coincide with garden planting time, I can not wait. I have not received word if it has been approved yet so wish me luck.
